Grandpa s BBQ G randma has been busy in the garden tending to the fruit and vegetables that they grow and harvest through the summer months so Grandpa has shared a BBQ recipe to enjoy Method Using scissors snip the skins off the sausages and put the sausage meat in a bowl Discard the skins Add the breadcrumbs 2tsp of relish and the chopped sage and mix well with your hands Divide the mixture into four and shape into balls Push a chunk of cheese into the middle of each ball flatten the ball into a burger shape making sure it is completely sealed in the burger to prevent it leaking out when cooking Spray a little oil over the sweet potato slices and sprinkle with smoked paprika on both sides Cook for 25 30 minutes in a hot oven or on a griddle on the barbecue At the same time put the burgers on the barbecue for about 10 minutes on each side being careful not to cook them too quickly as they will burn on the outside but not be cooked in the middle Make sure the sausage meat is cooked through before removing from the barbecue 8 BBQ Sausage Burgers with Ch eese Sweet Potato 4 6 Pork saus ages butcher s are usually best 2oz fresh brea dcrumbs 4tsp caramelis ed onion relis h 4 fresh sage leaves choppe d finely you can used drie d sage 4 1 2inch chun ks of cheese mature or blue cheese w orks well 4 Sweet pota toes peeled and cut into slices Smoked papr ika 4 Brioche burg er buns cut in half Toast the burger buns on the barbecue add the burgers to the buns top each burger with the remainder of the relish and serve with the sweet potato and a side salad Enjoy with a glass of your favourite cider or ale

Our local heritage S panish Flu in Holmes Chapel Just over 100 years ago Holmes Chapel villagers were fighting a pandemic very similar to the one we are suffering today Dr Picton was the only doctor in the village and he was assisted by a local nurse paid for by charitable contributions All patients had to pay for doctor s visits and medicines Here is a timeline of how the crisis unfolded in the village Spanish flu arrived in the village on Thursday 10th October 1918 Cranage School s Headteacher reported Influenza epidemic began suddenly 10 cases reported today On Tuesday 15th the Crewe Chronicle reported that Influenza has broken out in Holmes Chapel At the Paper Mills on Macclesfield Road 13 persons who became affected were compelled to cease work On Wednesday 16th the Head of the Mixed School on Macclesfield Road reported Attendance this morning is very bad as Spanish Influenza has broken out Ten children who are absent have the complaint while others at school show symptoms On Thursday 17th Cranage School Head reported 33 cases of influenza School closed until 4th November The Mixed School reported Attendance only 58 of roll 125 The Medical Officer has closed the school until 18th November due to influenza On Friday 25th the papers reported The epidemic has spread alarmingly this week and there is hardly a family which has escaped Over 12 30 cases among the boys at Saltersford College are reported A local dance was cancelled that weekend On Monday 18th November the Mixed School reopened although the Headmaster was reported as suffering from pleural pneumonia and only returned on 16th December The epidemic was still on going because a Jumble Sale on 23rd November was postponed for a fortnight in consequence of the severe epidemic of influenza which has been raging in the Parish for the past few weeks The epidemic then went away over Christmas but in the New Year returned to the Mixed School On Friday 17th January 1919 Attendance worsened steadily this week Today 40 children are absent suffering from colds and croup On Monday 20th the Head reported Today 60 children present out of 125 There is every symptom of a whooping cough epidemic or some chronic throat and bronchial trouble On Friday 24th because of a steady decline in numbers the school was closed for a fortnight After the epidemic had subsided the Medical Officer reported that there had been seven deaths in Holmes Chapel due to influenza From the papers we know the names of four Walter Denby 53 William Postles 32 George Pierpoint 41 and George Cartwright 52 From the middle of February 1919 Week 18 Holmes Chapel appears to have been finally clear of the epidemic Holmes Chapel U3A Local History Group

Cider O ver the past 2 issues we ve touched very briefly on the history of cider ending on the biggest alcoholic vessel in the world owned by HP Bulmers Today we ll start to go through the process of making cider itself something you can do very easily at home with a few basic tools It all begins with the humble apple or pear if you fancy a perry As ever the quality of the product that goes in at the start gives the quality at the end so pick them wisely You ll get about 10l of juice from every 18 20kg of fruit so if you re planning on making a lot scale up wisely The fruit will then need to be prepared by washing sorting Bruised apples are fine rotten or decayed fruit isn t Pretty standard so far right The fruit will then need scratting or milled into a pomace before pressing A pomace is simply crushed apple can be done low tech with a lump of wood in a bucket or hi tech with a blender or pulpmaster big whisk attached to a drill The pomace now needs pressing to get as much juice out of the pulp as is physically possible Commercial cidermakers use a different number of methods depending on their history or scalability The most popular is the rack cloth press where the pomace is placed in between layers of cloth and wood racks very much like a cheese press then squeezed in a vertical vice It doesn t need to be quite as sophisticated however you can simply put it in a hessian bag in a trug place a plank of wood on top and stand on it Catch the juice in a sterilised container you are now ready to let it ferment There are natural wild yeasts all around us fruit is no exception You can choose to clear out these wild yeasts with a campden tablet do some research on quantities please or simply let them get on with things ferment the sugar out themselves Now is also the time to check the sugar levels of the fruit add pectin if it is to be clear when ready generally make sure the juice is as good as it can be for the yeast to get 14 to work on it Fermentation as you already know is where the sugars in the liquid are turned into alcohol giving off CO2 in the process In warmer temperatures this happens relatively quickly starting within 12hrs with a cloth covering the juice leaving it open to the air aerobic fermentation Once things have kicked off it s normally switched to anaerobic fermentation by sealing the vessel to stop any further degradation from oxygen it will create its own little protection with a blanket of CO2 over the top of the liquid Fermentation can be done in a week however it can in lower temperatures take a few months to fully ferment out Don t panic all good things come to they who wait as the saying goes Until next time stay safe be kind Rich The Beer Emporium WADE s Gardening Service General Maintenance Lawn Cutting Strimming Tree Work Remedial Work Lawn Treatments Fencing Landscaping 30 Years experience Reliable trustworthy One off s Weekly Bi weekly monthly Call us today on 07584 671 414

Amy s thoughts I have never been a great public speaker and am generally quite shy but sometimes you need to step outside of your comfort zone it can be very challenging but ultimately rewarding My challenge was to become the host of The Old Red Lion Quiz Night I ve always enjoyed a good pub quiz however terrible at them I may be A bit of healthy competition makes for a lively atmosphere on a Wednesday evening The quiz was always hosted by charismatic Steve who is a long running member of the team When I took over as host of the quiz on I knew I had some big shoes to fill I have worked at The Old Red Lion at several points in my life The pub is central to the village there has always been a great atmosphere and as a member of the team you feel part of the community as soon as you step foot behind the bar When the opportunity came up to host the quiz I was working full time during the day so it was easy to fit into my schedule and made for an enjoyable way to spend my Wednesday evenings so I had to say yes The quiz is delivered every week from a global quiz company Many people new to the quiz expect the host to have written the questions this certainly isn t the case it would not be nearly as interesting or difficult if I had written them Many people think of pub quizzes with regular competitive teams roaming from pub 24 to pub each night of the week to scoop the prize and not give the amateur pub quizzer that happened to be there that night a look in but again this is not the case Yes we have a few regular teams but it is not the same ones winning each week the quiz nights are open to all and can always make for a good night and give you something to smile and laugh about The quiz night is made up of several different rounds meaning there is a little something for everyone it really is anyone s game and only easy if you know the answers As the host it s difficult to find a good balance of how fast or slow to read the questions how many times to repeat multiple choice answers and there are many times when I mess up mainly with the pronunciation of names and places It is good to know that people are always happy to offer friendly feedback I ve found the ability to laugh at myself essential and I always have a trusty bottle of Prosecco to calm the nerves A good quiz night always has a prize The Old Red Lion is no different each team pays to enter and at the end all the collected money goes towards the prizes and a raffle The raffle money rolls over if it s not won it can build up to a very appealing amount so it may always be worth entering There s something special about being a part of the Red Lion team you feel immediately welcomed by not just the staff but also Holmes Chapel as a community I m looking forward to the quiz starting up again mostly as a customer but mainly as an occasional host Amy x

Restoring balance A s we navigate our way through the coming months and look forward to seeing friends family and work colleagues again not to mention our favourite cafes and restaurants and our favourite haunts its time to restore the balance within Many of us have probably eaten more food and drank more alcohol during these strange and restrictive times but as we move into the summer and an easing of those restrictions it is a good opportunity to restore our own natural norms and habits and even create some new ones as we look forward to boosting our immune and emotional systems I have some ideas which I hope will help but would like to add that when we start to look towards making positive changes and restoring healthy habits its important to add a big dose of self compassion and turn down the volume on our inner critic Rapidly expanding research demonstrates that self compassion is strongly associated with emotional wellbeing less anxiety depression and stress maintenance of healthy habits such as diet and exercise and satisfying personal relationships Research also shows that Self compassionate people engage in healthier behaviours like exercise eating well drinking less Self compassion provides the safety needed to admit mistakes rather than needing to blame someone else for them and that Self compassionate people take greater personal responsibility for their actions They don t just beat themselves up when they fail and are less afraid of failure and more likely to try again and persist in their efforts after failing It is strongly associated with fewer negative states like depression anxiety stress and shame and negative body image It is strongly linked to more positive states like happiness life satisfaction optimism and better physical health 38 Go slowly and gently with whatever changes you wish to make and consider the following Start each day well a good breakfast when you start the day mindfully simply put being aware of how you are feeling as you awaken and noticing your surroundings rather than allowing the mind to start the day at full throttle with all the items on your to do list compassionately with gratitude and an open mind and heart for all the day will bring you are fuelled in the right way to meet the demands and joys that the new day offers Aim to go to bed at a regular time and get up at a regular time our body s own circadian rhythms and body clocks work better with routine Practice the art of slowing down eating and drinking slowly helps us to eat and drink less Try alternating alcoholic drinks with refreshing mocktails and ice teas for the summer months ahead If you are physically able then taking a daily walk incorporates good fresh air enjoying nature and creating natural tiredness for a better night s sleep and helps flush out toxins and helps to restore and maintain healthy weight Practice relaxation perhaps listening to music attending a class sitting quietly reading being creative perhaps drawing or journaling Finally as you reflect on restoring the balance within to encourage healthy habits each day think about this acronym AOL A everything you achieve each day deserves recognition however great or small the achievement O all you have overcome on your journey towards positive change and personal development L all you have learned from your challenges about you your abilities capabilities strengths and all you have learned that empowers you Annette Boden Wellbeing

Parish Council news A message from the Chairman It has been a very difficult and challenging time for our residents since March We have had to be distant from loved ones manage home schooling working from home or being furloughed seen regular meetings of groups we attend cancelled churches closed and much more The Parish Council however is proud to serve a village whose residents in this time of challenge rose up to look after one another and support one another On behalf of the Parish Council I would like to say THANK YOU Thank you to those volunteers who have and are still doing shopping and other basic errands to help protect residents They have supported 148 households during this crisis but can still help you if you need support so please contact us on the number below Thank you to our local businesses who have been able to provide services throughout and for those that have now reopened in making your business safe for us Thank you to our Health Centre staff and pharmacy staff who have worked tirelessly throughout to support our residents Thank you to the schools and their staff for all the education services that have been provided to the children of key workers and for those able to return in June Finally thank you to you our residents for the excellent manner in which you have responded to the guidance to stay home and stay safe It is not over by a long way yet but the Parish Council will continue to do all we can to support our residents as best we can We hope by the time you read this we will see the Community Centre open again maybe just in time for the warmer weather we hope is also coming soon Brian Bath Chairman 42

Rumble in The Jungle Y ou may have noticed some wonderful creative Jungle displays popping up around Holmes Chapel Cranage Rumble in the Jungle 2020 was launched earlier this month and runs until 14th August Organised by Dane Sound Community Radio the station thought that it was the right time for our community to join in a safe fun family event get outdoors exercise and take part in the Safe Safari Even with the challenges of re opening after lockdown local businesses have joined in with great enthusiasm creating wonderful displays in shop windows and around their premises Residents have amazed us with their creativity and the range of displays is just fantastic A lot of work and thought has gone into all of them even when choosing a name for their creation At the time of writing there are 50 displays 52 to see A Google Safe Safari Map has been created to show where they are and everyone is encouraged to take part The link to the map is available on the Facebook page rumbleinthejungle2020 For those not on Facebook you can email us for a list of the roads to visit at DS2020RITJ hotmail com Voting will take place for the best displays and prizes have been donated by local businesses All updated information is available on the Facebook page or by email or you can call Debra on 07769 214100 The event is also aiming to raise funds for Chester Zoo and Lower Moss Wood Wildlife Hospital Any donations for these causes can be taken to The Print Room Church Walk Holmes Chapel The Rumble in the Jungle Team

Health W ho doesn t enjoy a little bit of sunshine but did you know it can also have important benefits for our heath Vitamin D is sometimes known as the sunshine vitamin and has been in the news a lot recently so as we are in the middle of summer it s probably a good time to talk about it Vitamin D is essential for our health and wellbeing It helps the body absorb the minerals calcium and phosphate which are essential for strong healthy bones teeth and muscles As well as this Vitamin D is crucial for boosting our immune system In the summer months from the end of March to the end of September as much as 90 of the vitamin D your body requires can be produced by the sun This happens when you are outdoors and your skin is exposed to UV light from the sun before you apply sun screen for a short period of time There is no guidance on how long this should be as it does depend on different factors such as your skin colour Some people may have medical conditions or be on medication which means they should avoid direct exposure to the sun In these cases always follow medical advice and taking a supplement might be a safer option For everyone it is really important to avoid too much sun exposure particularly allowing your sun burn so please be careful The rest of the Vitamin D required comes from a healthy balanced diet Foods rich 54 in Vitamin D include oily fish red meat and eggs There are particular groups of people who are advised to take a vitamin D supplement These include Children under 5 years of age and people who are at risk of vitamin D deficiency such as this who stay indoors much of the time live in an institution such as a care home wear clothes that cover much of their skin when outdoors Also if you have darker skin such as those from African African Caribbean or South East Asian background you may not get enough Vitamin D produced by sunlight In the winter months there is not enough UV light coming from the sun to produce enough Vitamin D so everyone should consider taking a supplement for this time During the Coronavirus outbreak the Department of Health has also advised people to consider a 10microgram supplement of Vitamin D to keep our bones and muscles healthy This is because a lot of people have been spending more time indoors and have not exposed to the sun as much More information on this and on doses can be found on the NHS website www nhs uk So have a lovely summer and enjoy the sun safely Just think as well as making you feel better a little bit of sun might just be giving your bones muscles and immune system a boost as well Karen Cheshire Clinical Reflexology

Lockdown stories I d never milked a I t s hard to imagine falling asleep now without the gentle hum of the parlour and the mechanised voice recalling numbers of cows waiting patiently to be milked But for the last ten weeks that s the soundtrack that s gently lulled me off to sleep a world away from the hubbub and traffic that my usual life in Birmingham offers I ve been lucky enough to be on lockdown with my friends Karen and Tom at Halton Farms which has meant combining my TV life with my love of the countryside It s not totally new to me I m Cheshire born and bred and have grown up on the fringe of farming life Dad Grandad and my Great Grandpa were all well known agricultural engineers My friends growing up were mostly farmers I was a member of Young Farmers but it wasn t until Covid 19 struck that I ever milked a cow I ve been coming to Halton Farms near Congleton for years now I m lucky enough to count Kaz and Tom amongst my closest friends I ve watched them tackle falling milk prices with gusto reinvent working practices to ensure ALL the animals here have the best life they can and trailblaze their way to the top But in all honesty although I knew they worked hard until I lived here I never realised how hard farming is But it seems to be seeping under my skin much like the mud under my once manicured nails Back in March when talk in the BBC Midlands Today newsroom was about whether we d go into lockdown I had a week of leave to take Knowing that there was the potential of being locked in a flat in Birmingham for a week Kaz invited me and my sighthound Brandy to stay ten weeks later and we re still here And what a ten weeks it s been Everything s changed for me even morning s I wake up with sunlight streaming through my window the dawn chorus replacing the usual sound of my alarm clock Before breakfast there are jobs to do but not before starting the day right with one of Tom s milky coffees Everyone works really hard here so to have a few jobs based around the horses makes me feel useful After mucking out and if I m honest being waylaid playing with the calves it s breakfast time Cooler days see big pots of steaming porridge warmer weather brings fresh fruit and cereals It s a noisy affair in jokes banter talk of which new bit of equipment is being coveted by the boys or serious talk of milk prices and Covid But there s a true sense of camradery at a time when family is locked away a new family found More than that there s normality here The animals need feeding the jobs need doing and life carries on Red overalls and wellies back on and it s off to feed the cows fix the fences or various other jobs To get a true sense of what it s like to live and work here I was offered a 4 30am start and a milking shift Having been in parlours before I thought I knew what to expect But four hours and 500 cows udders later I d had my eyes opened I d never really thought about it but no two cows are the same The team here love them I quickly

cow until lockdown learned everyone has a favourite but most of them can remember their numbers with just a glance Another skilled learned Dodging the poop The day job has continued there have been trips down the M6 to the office in Birmingham the city a desolate locked up land Technology has helped there have been days I ve been able to work from the farm Every Friday I present the weather from the garden the team of seven dogs becoming internet sensations with cameo appearances on the 6 30pm news Around that I can ride the horses whenever I wish taking full advantage of the quieter roads I take the Springer Spaniel Belle running around the fields soaking up the scenery exploring parts of the farm I ve never noticed before One of the things I think Kaz and Tom would like for me to develop during this time are cooking skills the ability to craft a nice tea still alludes me but maybe one day I ll crack that After a hard earned gin and tonic and debrief about the day it s bed time Earlier than usual for me but it s remarkable how quickly my body clock has changed Tonight I stayed up though not to drink Prosecco and zoom like my friends No it was my turn to make sure the chickens were safely in bed they were although herding the new rescued battery hens would have been quite funny to an observer If farm life and its challenges weren t enough on day three of lockdown the Halton s started a new venture doorstep deliveries of their fresh pasteurised milk I can now add bottle labelling to the list of skills I ve acquired It s made a busy place even busier at a time when the rest of the world is much quieter There have been late nights snatching a bite to eat as hundreds of bottles are labelled whilst in the dairy they re filled ready to be distributed hours later It s been a total success which at a time when the milk price has plummeted has really helped But running a business on top of a business isn t easy I take my hat off to them and am proud that I was there to help with the very first deliveries I know this can t and won t last forever But I ve learnt skills I never expected and I have a new found love for cows My respect for farmers has escalated They work tirelessly to keep food on our tables but right now they re losing money every day They keep going though because whatever happens the animals always come first Every day as a little more normality returns to the UK I know I m getting closer to moving back to the city But now I know my heart has always been and will always be in the countryside And I ll never forget my lockdown life where I remembered exactly where I had left it Rebecca Wood BBC Halton Farms If you have a lockdown story you would like to share about new skills volunteering or how lockdown may have changed your career or focus then please email matt thevillagesmag com
